Summer fruit smoothie
2 very ripe peaches
½ cup fresh or frozen strawberries or raspberries
100g vanilla or plain yoghurt
1 tsp vanilla essence
3 sprigs fresh mint
- Combine all ingredients in a large blender and blend until a smooth consistency is reached. Serve over ice.
Tip: If using fresh berries, only wash just before using them to avoid mould growth from the extra moisture.
Leftovers: If you have leftovers, keep them in the fridge for tomorrow's breakfast and pour over granola or muesli for a fruity brekky.
Variation: Use other summer fruits like mango or apricot instead of peach and substitute blueberries or even pitted cherries.
