Grilled leftover club sandwiches
8 slices of bread
olive oil spray or butter
tasty, Swiss or cheddar cheese, sliced
approx 200gm leftover ham, thinly sliced
approx 200gm leftover turkey or chicken, thinly sliced
lettuce or baby spinach leaves, rinsed
dill pickles, thinly sliced
fries or roast spuds for serving
- Spray bread slices with olive oil (or spread lightly with butter). With a griddle pan or barbecue on medium heat, grill bread for 2–3 minutes each side until grill lines appear.
- After turning, place the cheese slices on the already grilled side so it melts slightly while the other side grills. Remove from grill and spread mayonnaise on the slices without cheese.
- Microwave ham and turkey for 30–60 seconds, until warmed through and top the bread and cheese with ham and turkey.
- Lay slices of avocado and pickles (if using) over the meat and top with lettuce or spinach leaves and the other slice of bread. Serve warm with fries or roast potatoes.
Tip: Add sliced tomato, red onion or even sauerkraut for a bigger veggie hit.
