Leftover bolognese pizza
¾ cup of bolognese sauce
1 pizza base (or make your own)
5 cherry tomatoes, quartered
150g mozzarella cheese, sliced
4 tbsp grated parmesan cheese
fresh basil leaves
- Preheat oven to 200°C.
- Lay pizza base out on a large round tray or pizza stone (preheat pizza stone if you're using one).
- Spoon over bolognese sauce, top with cherry tomatoes and cheeses.
- Bake for 15 minutes or until bubbling and golden. Garnish with fresh basil and serve.
Tip: Top with additional fresh rocket for some extra greens.
Leftovers: Store extra slices in an airtight container in the fridge and heat up for lunch tomorrow.
Variations: To up the vegetable content, spread thinly sliced mushrooms, onion, zucchini or capsicum over the bolognese sauce.
