Use up leftover ham in this quick and tasty zucchini slice.

Ham and zucchini slice


2 zucchinis, coarsely grated 
1 carrot, grated 
1 capsicum, chopped finely 
2 spring onions 
100g ham, diced
100g feta, crumbled (or grated tasty cheese)
1 cup self-raising flour 
4 eggs, lightly beaten 
¼ cup milk 
2 tbsp olive oil


  1. Preheat oven to 180°C. Grease and line a 20cm x 30cm pan or a lamington tin.
  2. Combine all ingredients in a bowl, then pour into pan.
  3. Bake for 40 minutes or until brown on top, and it doesn’t wobble when moved.
  4. Set aside to cool slightly, then cut into squares and serve hot or cold with a side salad.

Tip: This slice can be easily frozen by cutting into slices and freezing in a container, separating slices with baking paper.

Variation: Add any leftover cooked vegies in place of the carrot and capsicum, such as broccoli, carrot, sweet potato or frozen peas.
