Summer fruit smoothie

2 very ripe peaches
½ cup fresh or frozen strawberries or raspberries
100g vanilla or plain yoghurt
1 tsp vanilla essence
3 sprigs fresh mint
200ml milk


  1. Combine all ingredients in a large blender and blend until a smooth consistency is reached. Serve over ice.

Tip: If using fresh berries, only wash just before using them to avoid mould growth from the extra moisture.

Variation: Use other summer fruits like mango or apricot instead of peach and substitute blueberries or even pitted cherries.


If you have leftovers, keep them in the fridge for tomorrow's breakfast and pour over granola or muesli for a fruity brekky.
