Fresh skewer snacks

Ingredients

Use any of the following

carrot
celery
radish
cucumber
red, green or yellow capsicum
raw zucchini
cherry tomatoes
whole basil leaves
olives
cheddar, hard fetta or bocconcini cheese
red onion (optional)

Method

  1. Chop ingredients into 1cm slices or bite-sized pieces.
  2. Thread onto skewers and serve.

Variation: Serve skewers with yoghurt or pesto dips or drizzle with a pesto/olive oil mixture for extra flavour.
